So, what is albumen?
Albumen is a highly nutritious and versatile food ingredient commonly known as egg white. It is a clear, viscous fluid that surrounds the yolk in an egg and is composed of approximately 90% water and 10% protein. Albumen is an excellent source of high-quality protein and essential amino acids, making it a popular ingredient in many foods, from confectionery and baked goods to processed meats and sports nutrition products. Its foaming, gelling, and emulsifying properties also make it a crucial component in the production of many culinary delights, including meringues, soufflés, and custards.
