So, what is amidon modifiés?
"Amidon modifiés" is a French term that translates to "modified starches" in English. These starches are typically derived from various plant sources and have been chemically or physically altered to improve their functionality in food processing applications. The modifications can include changes to the starch's solubility, stability, viscosity, or gelatinization properties. Modified starches are commonly used as thickeners, stabilizers, emulsifiers, or texturizers in a wide range of food products, including sauces, soups, dressings, baked goods, and processed meats. They offer food manufacturers a cost-effective way to improve product quality, consistency, and shelf life. However, some consumers may prefer to avoid modified starches due to concerns about their potential impact on health and digestion.
