So, what is lactaires?
Lactaires, also known as saffron milk caps, are a type of wild mushroom commonly found in Europe and North America. These mushrooms have a distinct bright orange cap with yellow gills and a firm, meaty texture. Lactaires are prized for their delicate, nutty flavor and are often used in French and Italian cuisine, particularly in creamy sauces or alongside gamey meats. While delicious, it's important to note that not all lactaires are edible, and some can cause severe gastrointestinal issues if consumed raw. As with all wild mushrooms, it's best to source lactaires from a trusted supplier or expert forager.
