So, what is mallas?
Mallas, also known as dried cassava, is a versatile ingredient used in many traditional cuisines across the world. Obtained by peeling, grating, and dehydrating the starchy cassava root, mallas is a gluten-free and low-fat ingredient that can be ground into flour or added to soups and stews as a thickener. It has a nutty and earthy flavor and a texture similar to coconut flakes. Mallas is also an excellent source of carbohydrates, fiber, and essential minerals such as potassium, magnesium, and phosphorus, making it a nutritious ingredient to incorporate into your diet.
