Monoglycerides of fatty acids, also known as glyceryl monoesters, are a type of emulsifier commonly used in food products to improve texture and extend shelf life. They are produced by combining glycerol with fatty acids, typically sourced from vegetable oils. Monoglycerides work by reducing the surface tension between oil and water, allowing them to mix more easily and create a smoother, more homogenous product. They are commonly found in baked goods, dairy products, and margarine, and are generally considered safe for consumption in moderate amounts.
