So, what is polyglycerol esters of fatty acids?
Polyglycerol esters of fatty acids, also known as PGFE, are a type of food emulsifier used to blend oil- and water-based ingredients together. These emulsifiers are made by combining fatty acids with polyglycerol, which creates a molecule that is hydrophilic (water-loving) on one end and lipophilic (fat-loving) on the other. This unique molecular structure allows PGFE to form stable emulsions in a wide range of food products, including baked goods, confectionery, and dairy products. PGFE can also improve texture, increase shelf life, and reduce fat content in some food products. Additionally, PGFE is considered safe for consumption by regulatory agencies around the world.
