Polysorbates are a group of emulsifiers made from sorbitol, a sugar alcohol derived from corn starch. They are commonly used in the food industry to mix together ingredients that would otherwise not blend, such as oil and water. Polysorbates are also used to stabilize the texture and appearance of many processed foods, such as ice cream, salad dressings, and baked goods.
