So, what is sels nitrites?
Sodium nitrite, commonly known as "sels nitrites," is a food preservative and color fixative used primarily in processed meats. This ingredient helps prevent bacterial growth, enhances the meat's flavor, and gives it a desirable pinkish hue. While sodium nitrite has been linked to health concerns, such as an increased risk of cancer, its use is regulated by the FDA and is generally considered safe when used in moderation. Despite its controversial reputation, sodium nitrite remains a popular ingredient in many processed meats, including bacon, hot dogs, and lunch meats.
