So, what is sels?
Sels, also known as sel gris, is a coarse sea salt that is harvested from tidal ponds along the coast of Brittany, France. It is characterized by its distinct gray color, which comes from the minerals and nutrients present in the clay of the ponds. Sels has a slightly damp texture, making it ideal for seasoning meats and vegetables, and is prized by chefs for its mineral complexity and subtle flavor. Because of its unique taste and texture, sels is often used as a finishing salt to enhance the flavor of dishes just before serving.
