Sirop de glucose fructose de maïs, also known as high fructose corn syrup (HFCS), is a sweetener made from corn starch. The corn starch is first broken down into glucose, and then some of that glucose is converted into fructose using enzymes. This process creates a sweet syrup with a similar taste and texture to traditional sugar, but with a higher concentration of fructose. HFCS is commonly used in processed foods and beverages as a sweetener and preservative. While it is generally recognized as safe by regulatory agencies, some studies have linked HFCS consumption to various health issues, including obesity and diabetes.
