Sucroésteres de ácidos grasos, also known as sucrose esters of fatty acids, are a type of food ingredient commonly used as an emulsifier in various food products. These compounds are derived from the esterification of sucrose with fatty acids and can be found naturally in fruits and vegetables, as well as in some processed foods. As an emulsifier, sucroésteres de ácidos grasos help stabilize mixtures of two immiscible substances, such as oil and water, by reducing surface tension and preventing separation. In addition to their emulsifying properties, sucroésteres de ácidos grasos are also known to improve texture, increase shelf-life, and enhance flavor in many food products.
