So, what is sweetbreads?
Sweetbreads are a delicacy that often goes overlooked in modern cuisine. These glandular meats come from the thymus and pancreas of a young calf, lamb, or pig, and have a unique, soft, velvety texture. They are typically blanched, poached, or sautéed before being used in recipes. Sweetbreads have a rich, slightly sweet, and nutty flavor, and can be used in a variety of dishes such as stews, soups, and appetizers. Despite their name, sweetbreads are not actually sweet, but rather get their name from the Old English word "sweetbread" which means "tender meat".
