So, what is y polifosfatos?
Y polifosfatos, also known as polyphosphates in English, are a group of food additives used to enhance texture, increase moisture retention and extend shelf life. They are commonly used in processed meats, seafood, and dairy products. Y polifosfatos work by binding with water molecules, allowing for increased juiciness and tenderness in meat products while preventing the formation of ice crystals in frozen seafood. While they have been approved for use by regulatory bodies such as the FDA, some studies have linked excessive consumption of y polifosfatos to negative health effects including kidney damage and cardiovascular disease, so it is important to consume them in moderation.
