So, what is albondigas?
Albondigas are meatballs originating from Spain but popular throughout Latin America. The name comes from the Arabic word "al-bunduq," meaning hazelnut, which describes the shape of the meatballs. Typically made with ground beef or pork, albondigas are seasoned with a mix of herbs and spices such as cumin, paprika, and oregano. They are often served in a tomato-based broth with vegetables like potatoes, carrots, and onions.
