So, what is ammoniumcarbonaat?
Ammoniumcarbonaat, also known as baker's ammonia or ammonium bicarbonate, is a white crystalline powder that is commonly used as a leavening agent in baking. Despite its name, it does not contain carbonate ions but instead decomposes into ammonia, carbon dioxide, and water when heated. This reaction creates small pockets of gas that cause dough to rise and gives baked goods a light and fluffy texture. While it has been largely replaced by modern baking powders, it is still used in some traditional European and Scandinavian recipes for cookies, biscuits, and crackers due to its unique flavor and texture properties.
