So, what is butterfett?

Butterfett is the German word for butterfat, which refers to the fatty portion of milk, often commercially processed as clarified butter or anhydrous milk fat. It is produced by churning cow milk or cream into butter and then separating the pure fat from the water and non-fat milk solids through gentle heating, decanting, or centrifugation. Food manufacturers use butterfett to provide rich flavor, improve texture, and extend the shelf life of products without adding excess moisture. It frequently appears on the ingredient lists of European foods, especially in chocolates, biscuits, pralines, pastries, and other baked goods.

Butterfett is not vegan because it is an animal-derived dairy fat. Since it is extracted directly from the milk of mammals, usually dairy cows, it cannot be synthesized from plant-based sources. Any food item listing butterfett contains animal milk derivatives and is therefore unsuitable for a vegan diet.
