So, what is calciumalginaat?
Calciumalginate is a food ingredient derived from alginic acid, which is extracted from brown seaweed. It is commonly used as a thickener, stabilizer and emulsifier in the food industry. As an additive, it has excellent water-binding capacity and can form strong gels when combined with calcium ions. This characteristic makes it ideal for use in products such as dairy alternatives, salad dressings, fruit preparations, and bakery items. In addition to its functional properties, calciumalginate is known for its ability to enhance the nutritional content of foods by providing a source of dietary fiber.
