So, what is carragenato?
Carrageenan is a natural food additive derived from red seaweed. Carragenato, its Spanish name, is a highly versatile ingredient with excellent thickening, stabilizing, and emulsifying properties. It's commonly used in a variety of food products such as dairy, processed meats, and plant-based alternatives as a natural substitute for gelatin. Carragenato is also a vegan-friendly ingredient that does not alter the taste or nutritional value of the food. Despite some controversy surrounding its safety, carragenato is approved for use in the food industry by regulatory agencies worldwide.
