So, what is céleri'-rave¹?
Céleri-rave, also known as celeriac, is a knobby, root vegetable that is often overlooked in North American cuisine but is highly valued in Europe. It has a rough, brown exterior that conceals a creamy, white flesh that is fragrant and nutty, with a hint of celery. Céleri-rave can be cooked in a variety of ways, including roasted, boiled, or mashed, and is often used to add flavor and texture to soups, stews, and gratins. It is also a good source of fiber, vitamin C, and potassium, making it a healthy and tasty addition to any dish.
