Cépage is a French term used to describe a specific grape variety or a blend of grape varieties used to make wine. It is often referred to as the "soul" of a wine as it determines the wine's aroma, flavor, and character. The word "cépage" is derived from the French word "cépée," which means vine stock or vineyard. Each cépage has its own unique characteristics and is influenced by the soil, climate, and winemaking techniques used. Some of the most famous cépages include Cabernet Sauvignon, Chardonnay, Merlot, and Pinot Noir. The use of different cépages in winemaking allows for an endless variety of wines with distinct and complex flavors.
