Citrate is derived from citric acid and can be found in various forms, including sodium citrate, potassium citrate, and calcium citrate. It has a slightly sour taste and is often added to foods to enhance their flavor and extend their shelf life. Additionally, citrate is also used in the pharmaceutical industry as an anticoagulant and in the cosmetic industry as a pH regulator.
