So, what is coagulum?
Coagulum is a unique food ingredient that is commonly used in traditional cheese-making processes. It is a thick, jelly-like substance that forms when milk is heated and combined with a coagulating agent, such as rennet. The coagulum traps the milk's proteins and separates them from the liquid whey, which is then drained off to create cheese curds. Coagulum can also be used in the production of tofu and other soy-based products, as well as in the preparation of certain desserts. Its thick, gelatinous texture and ability to bind proteins make it a versatile and essential ingredient in many culinary applications.
