So, what is crawfish?

Crawfish, also known as crayfish or crawdads, are small freshwater crustaceans that resemble miniature lobsters. They are commonly found in streams, rivers, and swamps throughout the Southern United States, as well as in other parts of the world. These tasty critters have a sweet, delicate flavor that pairs well with Cajun and Creole spices, making them a staple in many Louisiana-style dishes. Crawfish can be prepared in a variety of ways, from boiled and seasoned to fried and served with dipping sauce. They are a popular ingredient in gumbo, jambalaya, étouffée, and other Southern-style dishes.
