So, what is de pe?
"De pe" is a type of Vietnamese fish sauce that is made from anchovies and sea salt. It has a pungent aroma and a complex umami flavor, making it a staple ingredient in many Vietnamese dishes. "De pe" is traditionally made by layering anchovies and salt in large wooden barrels and allowing them to ferment for several months. The resulting liquid is then strained and bottled, producing a dark brown sauce that is high in protein and nutrients. In Vietnamese cuisine, "de pe" is often used as a seasoning for soups, stews, and stir-fries, and is a key ingredient in the famous dipping sauce nuoc cham.
