So, what is de présure?
Dé présure, also known as rennet, is an essential ingredient in the production of cheese. It is an enzyme derived from the stomach lining of young ruminants such as cows, goats, and sheep. When added to milk, the enzyme causes the milk to coagulate and form curds, which are then separated from the whey and processed into cheese. This traditional ingredient has been used for centuries and is still preferred by many artisanal cheese makers today. However, vegetarians and those with specific dietary restrictions may opt for alternatives such as vegetable rennet.
