Diphosphate disodique, also known as disodium diphosphate, is a food ingredient commonly used as a leavening agent, emulsifier, and stabilizer in various food products. This white, odorless, and water-soluble compound is made up of sodium cations and diphosphate anions. It helps baked goods rise by producing carbon dioxide gas, while also preventing the mixture from becoming too acidic. Disodium diphosphate can be found in a range of food products, including cake mixes, instant pudding, processed cheese, and sausages. While generally recognized as safe by regulatory bodies, some individuals may experience adverse reactions to this ingredient, and it is best to consume it in moderation.
