So, what is distearate?
Distearate is a type of fatty acid ester commonly used as an emulsifier in food products. It is typically made by reacting stearic acid with an alcohol, such as glycerol. This results in a substance that is both hydrophobic and hydrophilic, allowing it to blend together ingredients that would normally separate, such as oil and water. Distearate is often used in products such as chocolate, margarine, and processed cheese to improve texture, stability, and shelf-life. It is generally recognized as safe by regulatory bodies and is considered a versatile and effective food ingredient.
