So, what is e161b?

E161b is the European food additive code for lutein, a yellow-orange carotenoid pigment used as a food colorant. Commercially, lutein is most frequently extracted from the petals of marigold flowers, though it can also be synthesized or isolated from animal tissues. Food processors add it to items such as baked goods, confectionery, sauces, processed foods, and dietary supplements to provide a yellow or orange tint.

E161b is possibly vegan because it can be derived from either plant or animal materials. Plant-derived versions come from marigolds or other botanical sources, whereas animal-derived versions can be extracted from egg yolks or animal fats. Ingredient labels rarely declare the specific origin of the additive. A reliable vegan certification on the packaging or direct confirmation from the manufacturer is required to verify that the E161b used in a specific product is entirely plant-based.
