E354 is the European food additive code for calcium tartrate, a substance used primarily as an acidity regulator, firming agent, and preservative. It is the calcium salt of tartaric acid. Industrially, calcium tartrate is commonly obtained as a byproduct of grape fermentation during winemaking, where tartrates naturally precipitate out of the liquid, or it is produced by combining tartaric acid with mineral-derived calcium salts such as calcium carbonate or calcium hydroxide.
This ingredient appears in a variety of processed foods, including canned fruits and vegetables, jams, jellies, confectionery, baking powders, and certain soft drinks. It helps stabilize the structure of foods and regulate overall acidity levels.
E354 is vegan because it originates solely from plant, mineral, or synthetic materials. The production of calcium tartrate does not rely on animal tissues, animal byproducts, or animal-derived processing aids, making it fully acceptable for individuals following a vegan lifestyle.
