So, what is e478?

E478 is the European additive code for lactylated fatty acid esters of glycerol and propane-1,2-diol, a food additive primarily used as an emulsifier and stabilizer. It is synthesized by esterifying glycerol and propylene glycol with lactic acid and fatty acids. Food processors add it to commercial baked goods, cake mixes, vegetable oil shortenings, and whipped toppings to blend fats with water and help aerate batters.

this additive is possibly vegan because its constituent fatty acids and glycerol can come from either plant or animal sources. Plant-derived versions are produced using vegetable fats such as soybean oil or palm oil, whereas animal-derived versions are sourced from slaughterhouse fats such as tallow or lard. Because ingredient panels rarely indicate the specific origin of these raw materials, consumers need to look for an official vegan certification on the product or contact the manufacturer directly to confirm its source.
