So, what is écorce de vanille épuisée?
Écorce de vanille épuisée, also known as spent vanilla bean, is the fibrous outer layer of a vanilla pod that has been scraped of its flavorful seeds. This ingredient may not have the same intense aroma and taste as fresh vanilla, but it still adds a subtle hint of vanilla flavor to dishes. Spent vanilla bean is often used to infuse cream, milk, or sugar for desserts such as custards, ice creams, and panna cotta. It can also be added to hot drinks like coffee or tea for a touch of warmth and sweetness.
