So, what is ételecet?

Ételecet is a Hungarian term that translates to table vinegar or food vinegar in English. It is typically a clear, distilled spirit vinegar produced through the two-step fermentation of plant-based sugars. Yeasts first convert sugars derived from agricultural crops such as corn, sugar beets, or grains into ethanol. Acetic acid bacteria, specifically Acetobacter species, then oxidize the alcohol into acetic acid and water. In some instances, it is also made by diluting food-grade synthetic acetic acid with water to the desired concentration.

Food manufacturers frequently list ételecet on Hungarian-language ingredient labels for pickled vegetables, mustards, prepared sauces, salad dressings, and various preserved foods. It functions primarily as an acidulant, preservative, and flavoring agent in these products.

This ingredient is vegan because its raw materials and production methods rely exclusively on plant, microbial, or synthetic sources. Unlike certain specialty wine or fruit vinegars that may occasionally use animal-derived fining agents like gelatin or isinglass during clarification, standard distilled table vinegar does not require animal-based filtration aids. No animal products or derivatives are used at any stage of its production.

How to quickly find the source of ingredients like ételecet?

We've built a vegan ingredients scanner that classifies food ingredients as "vegan", "non-vegan", or "potentially vegan".
It allows you to avoid non-vegan ingredients - just take a picture of a product's ingredient list, and the app tells you if the product is vegan or not.
