So, what is gdl?
GDL, or glucono delta-lactone, is a natural and non-toxic food additive commonly used as a leavening agent and acidity regulator. This white crystalline powder is derived from glucose through a fermentation process, and it is soluble in water and alcohol. In baking, GDL slowly breaks down into lactic acid, which reacts with baking soda to create carbon dioxide gas, resulting in a fluffy texture. GDL is also used in cheese production, tofu making, and as a coagulant in protein drinks. Additionally, it is a common ingredient in pickling solutions and salad dressings due to its acidic properties.
