So, what is gommalacca?
Gommalacca, also known as shellac, is a natural resin obtained from the secretions of the lac beetle in India and Thailand. This versatile food ingredient is commonly used as a glaze, coating, or protective layering for fruits, candies, pills, and chocolates due to its glossy finish and high resistance to moisture and oxygen. It is also used as a stabilizer and thickener in some beverages and baked goods. Gommalacca has been approved as safe by many food regulatory agencies, and it is a popular alternative to synthetic additives due to its natural origin and eco-friendliness.
