Hydrogenuhličitan amonný, also known as ammonium bicarbonate, is a white crystalline powder commonly used in baking. It acts as a leavening agent and releases carbon dioxide when heated, resulting in increased volume and lightness of baked goods such as cookies, crackers, and biscuits. Unlike other leavening agents, it does not leave a residual taste or odor, making it ideal for delicate recipes. In addition to its culinary applications, hydrogenuhličitan amonný is also used in the manufacturing of plastics, dyes, and pharmaceuticals.
