So, what is invertzucker?
Invertzucker, also known as inverted sugar, is a sweet and viscous syrup commonly used as a sweetener and texturizer in various food products. It is made by hydrolyzing sucrose, a simple sugar found in many fruits and vegetables, into its two constituent sugars, glucose and fructose, through the addition of acid and heat. The resulting syrup has a higher sweetness level and lower water activity than granulated sugar, making it ideal for use in products like candy, baked goods, and beverages. Invertzucker also has the ability to prevent crystallization, which gives products a smoother texture and a longer shelf life.
