So, what is isoascorbinsäure?
Isoascorbic acid, also known as isoascorbinsäure, is a stereoisomer of vitamin C commonly used as a food additive. With antioxidant properties similar to ascorbic acid, it is often added to processed foods to prevent spoilage and discoloration. Unlike vitamin C, however, it does not require an acidic environment to be effective. It also has the benefit of being stable in high temperatures, making it suitable for use in baked goods and other heat-treated products. Overall, Isoascorbic acid is a useful ingredient helping to maintain the quality of various food products.
