So, what is jaggery?

Jaggery, also known as "gur" in Hindi, is a natural sweetener that is widely used in Indian and Southeast Asian cuisine. It is made by boiling sugarcane juice or palm sap until it becomes thick and concentrated. Jaggery has a rich, caramel-like flavor with notes of molasses and a texture similar to fudge. It is often used in desserts, such as laddoos and halwas, and can also be added to savory dishes for a touch of sweetness. Jaggery is considered a healthier alternative to refined sugar because it retains beneficial nutrients and minerals from the sugarcane or palm tree.
