So, what is la cassonade?
La cassonade is a type of unrefined brown sugar that is commonly used in French cuisine. It has a moist texture and a rich, caramel flavor that adds depth to baked goods, sauces, and glazes. Made from sugar cane juice that has been boiled and crystallized, la cassonade has a distinctive golden brown color and a slightly larger grain size than regular brown sugar.
