So, what is la cochenille?
La cochenille is a natural food coloring ingredient derived from the dried bodies of female scale insects. The insect produces carminic acid to deter predators, which creates the vibrant red color when extracted. Widely used in the food industry as a natural alternative to synthetic dyes, la cochenille is known for its versatility and stability in various applications, including beverages, confectionery, and dairy products. It is also popular in traditional Mexican cuisine, where it is used to add color and flavor to dishes such as tamales and chorizo. Despite some controversy surrounding its use due to animal welfare concerns, la cochenille remains a sought-after ingredient for its unique properties and heritage.
We've built a vegan ingredients scanner that classifies food ingredients as "vegan", "non-vegan", or "potentially vegan".
It allows you to avoid non-vegan ingredients - just take a picture of a product's ingredient list, and the app tells you if the product is vegan or not.
