So, what is lardo?
Lardo is a traditional Italian cured meat made from the fatback of a pig that has been seasoned with salt, herbs, and spices, and then aged for several months. The result is a creamy, silky texture that literally melts in your mouth. Lardo's flavor profile is rich and complex, offering notes of nutty sweetness and savory umami. It's often served sliced thin and eaten as a delicacy on its own or used to add depth and richness to dishes like pasta, vegetables, and bread. Despite its high-fat content, lardo is considered a healthy ingredient due to its high levels of oleic acid, which may help reduce cholesterol levels.
