So, what is lécithine de soja?
Lécithine de soja is a natural food ingredient derived from soybeans that has a variety of uses in the food industry. It is a highly versatile emulsifier, meaning it helps mix two normally immiscible liquids, such as oil and water, and prevents separation. It is often used in the production of chocolate, baked goods, and margarine to improve texture, prevent clumping, and extend shelf life. Lécithine de soja is also a source of phospholipids, which can provide health benefits such as supporting brain function and reducing inflammation.
