Lecithin is a naturally occurring ingredient found in many foods, particularly soybeans, egg yolks, and sunflower seeds. It's a type of phospholipid that plays a critical role in cell membrane structure and function. As an emulsifier, lecithin is commonly used in the food industry to stabilize mixtures of ingredients that don't naturally blend well, such as oil and water. It's also used as a preservative to extend the shelf life of many packaged foods. Lecithin is a versatile ingredient that can improve the texture, flavor, and appearance of many foods and is often added to chocolate, baked goods, and dairy products.
