So, what is metilcellulosa?
Methylcellulose is a plant-based food ingredient commonly used as a thickener, stabilizer, and emulsifier. It is made from cellulose, a natural polymer found in plant cell walls, through a chemical process that involves the addition of methyl groups. Methylcellulose has the unique property of gelling when heated and dissolving when cooled, making it an ideal ingredient for creating gel-like textures in foods like vegan desserts, sauces, and dressings. It is also used in the production of vegetarian and vegan meat substitutes, as it can mimic the texture and mouthfeel of real meat. Additionally, methylcellulose is a popular ingredient in molecular gastronomy, where it is used to create edible foams and other innovative culinary creations.
