It is made from cellulose, a natural polymer found in plant cell walls, through a chemical process that involves the addition of methyl groups. Methylcellulose has the unique property of gelling when heated and dissolving when cooled, making it an ideal ingredient for creating gel-like textures in foods like vegan desserts, sauces, and dressings.
