So, what is midó modificat?
Midó modificat, also known as modified starch, is a versatile food ingredient commonly used as a thickening, stabilizing, and binding agent. It is made from various sources such as corn, potato, and tapioca, and undergoes a physical or chemical process to modify its structure and properties. This modification allows it to withstand high temperatures, acid conditions, and freeze-thaw cycles, making it ideal for use in a wide range of food applications. Midó modificat is commonly found in processed foods such as soups, sauces, gravies, and baked goods, and can also be used as a fat replacer to reduce calorie content in food products.
