Mleczan sodu, also known as sodium lactate, is a versatile food ingredient that boasts numerous benefits. It is a natural humectant and has antimicrobial and antioxidant properties, making it an ideal preservative. Sodium lactate can also enhance the texture of baked goods by improving their crumb structure and increasing their shelf life. In addition, it can be used as a flavor enhancer, adding a slightly tangy and salty taste to foods. Derived from lactic acid, mleczan sodu is often used in the production of sausages, meats, cheese, and other dairy products.
