So, what is natamicina?
Natamycin, also known as pimaricin, is a natural antifungal food preservative used to inhibit the growth of mold and yeast in a wide range of food products. It is a polyene macrolide antibiotic produced by the fermentation of the bacteria Streptomyces natalensis. Natamycin is approved for use in various foods, including cheese, meat, baked goods, and beverages, as it is effective against common spoilage organisms such as Aspergillus, Penicillium, and Fusarium. Unlike other preservatives, it has no taste, odor, or color, making it ideal for preserving food without affecting its sensory qualities.
