Natamycin is produced by a soil-dwelling bacterium called Streptomyces natalensis, and it is considered safe for human consumption by regulatory agencies such as the FDA and EFSA. Because of its effectiveness and safety, natamycin is a popular alternative to synthetic preservatives in the food industry.
