Nigari is a natural mineral salt that is traditionally used in the production of tofu, an essential ingredient in Japanese cuisine. It is obtained by extracting magnesium chloride from seawater and then evaporating it to produce white crystalline flakes. Nigari has a slightly bitter and salty taste, and it is rich in minerals such as magnesium, calcium, and potassium. This versatile ingredient can also be used in pickling and baking to add flavor and improve texture. Nigari is a healthy alternative to conventional table salt and is prized for its ability to enhance the umami flavor in dishes.
