So, what is nýmjólkurduft?
Nýmjólkurduft is an Icelandic term that translates to whole milk powder in English. It is manufactured by removing the moisture from fresh whole cow's milk, most commonly through a pasteurization and spray-drying process that reduces the liquid to a fine, shelf-stable powder. Food manufacturers frequently use it in Icelandic food products such as chocolate bars, confectionery, cookies, pastries, pre-made sauces, and packaged baking mixes. In these items, it functions to enhance dairy richness, improve texture, and extend product stability without introducing liquid content.
This ingredient is not vegan because it is derived directly from animals. Since nýmjólkurduft consists entirely of dehydrated dairy milk produced by cows, it contains animal-derived milk fats and proteins such as casein and whey. Any food product that lists nýmjólkurduft on its packaging contains dairy and is therefore unsuitable for people following a vegan diet.
We've built a vegan ingredients scanner that classifies food ingredients as "vegan", "non-vegan", or "potentially vegan".
It allows you to avoid non-vegan ingredients - just take a picture of a product's ingredient list, and the app tells you if the product is vegan or not.
